it was super cloudy the other day. my apartment was in a misty fog (typical for sf summers) and all i wanted was a pair of slippers and some soup. i equipped myself with some moo moos and a chopping knife and made this lentil and kale soup.
the soup sounds boring, looks okay, and is totally indescribably salty and flavorful. i was expecting to have to add some spices to the end – unnecessary. a new go to.

lentil & kale soup
½ cup each, chopped celery, carrots, onion
6 cups of vegetable stock
2-3 cups of cooked lentils
2 cloves of garlic (minced)
1 cup of chopped protein (ie. turkey meatball, turkey keilbasa, tofu)
a bunch of kale cut into 2 inch pieces
1. bring the first 4 ingredients to a boil.
2. reduce the heat and let simmer for 10-15 minutes
3. turn the heat off and add the protein and kale.
