a friend of mine came over the other day with packets of hoisin sauce and a salad from out the door. what is hoisin sauce? is it plum sauce with a fancy name? are they interchangeable in a recipe?
they are not the same. hoisin sauce is a spicier, more spice heavy sauce. but they are easily swapped. typically served with spring rolls, fried chicken, duck, or chinese chicken lettuce wraps; plum sauce is easy to make.
chinese plum sauce
2.5 pounds plums – chopped, pits removed
1/2 cup cider vinegar
3/4 cup packed brown sugar
1/4 cup soy sauce
2 teaspoons ginger
1/2 teaspoon chinese five-spice
1/2 teaspoon red pepper flakes
1. bring all ingredients to boil in a sauce pan over medium heat. simmer for 25 minutes.
2. transfer to a blender to smooth out the sauce and then bring back to a boil in the saucepan for 5-10 minutes.
