salmon with yogurt-dill sauce

a few weeks ago i was really craving some fresh fish. do you ever have random cravings like this?

i went to the store to buy a little filet and the butcher looked at me and told me that it was a day to treat myself (in retrospect, this was most likely a ploy to get me to buy more). regardless, i took the opportunity to buy a LARGE filet for myself and make a meal out of it. tahreated.

this is what i came up with. a tangy, fresh, but healthy faux-tartar sauce went perfectly with my salmon. it was goodgood.

salmon with yogurt-dill sauce

salmon filet for 1 or 2

1/2 cup greek yogurt

3 teaspoons stone-ground mustard

1 tablespoon chopped fresh dill

squeeze of lemon

salt/pepper

green beans

1. preheat oven to 400°f and line a baking sheet with foil.

2. sprinkle filet(s) with salt/pepper and roast for about 15 minutes.

3. meanwhile, mix: yogurt, mustard, dill, lemon, and a bit of salt/pepper to make your sauce.

4. don’t forget your veggies!
