kale & avocado salad

every monday i feel like i threw my body under a bus the day before. this is why, during the week, i try to eat vegan. in my mind, this way i will rid my body of toxins before the next weekend begins. kale provides me with vitamins K, A & C, a good source of fiber, and calcium.

it is also a great contrast to the bean/cayenne/cinnamon concoction which has become my low-fat, low carb solution.

kale & avocado salad

1 bunch of kale – stems removed and cut into 1 inch ribbons

2 tablespoons olive oil

2 tablespoons lemon juice

1/4 teaspoon sea salt

2 cloves of garlic, minced

3 tablespoons red onion, diced

2 tablespoons sunflower seeds

1 ripe avocado, cubed

1/2 cup cucumber, diced

put the kale into a large bowl and sprinkle the salt on top. massage the salt into the kale, using your hands until the kale begins to wilt. add the olive oil, lemon, garlic, and onion and continue to massage the salad until the kale becomes soft and shrinks in size. add the seeds, avocado, and cucumber and toss.

    I’m going to try this. B ought the kale at the farmers’ market yesterday and will pick up an avocado today. Grandma

    I love kale! You gotta try this with Lacinto/dino kale (if you haven’t). Way more tender type of kale and the most nutrient dense out of all the types.

  3. so yummy!!! laur and i inhaled this when wend made it for us. inspired me to try my own kale concoction with spinach, avo, garbanzo, almond slivers, and dried cranberries… kale is yum!!!
