grilled kale salad with plums & ricotta

a friend of mine sent this recipe to me a few days ago – before my trip to the plum factory. perfect summer salad.

kale on the “grill.” our bbq was out of propane so i improvised. we did half the kale on this grill and half in the oven at 350°F for 4 minutes on each side. both were good, the char is life-changing.

grilled kale salad with plums and ricotta from bon appétit

serves 4-6

4 tablespoons extra-virgin olive oil

3 tablespoons balsamic vinegar

2 teaspoons chopped fresh thyme

1 teaspoon honey

salt and pepper

4 medium plums – halved, pitted, thinly sliced

a bunch of kale leaves

3/4 cup fresh ricotta

1. whisk 3 tablespoons of the oil, vinegar, thyme, honey, salt and pepper in a medium bowl. toss plums to coat and then transfer them to a plate.

2. toss kale leaves in remaining tablespoon of oil and grill, turning once so that edges are charred and crispy. remove any large center-stems with a knife when cool enough to handle.

3. divide ricotta among the plates and season with salt and pepper. top with kale, plums, and extra vinaigrette.
