sweet potato quesadillas with green pesto-salsa

i think i may say this a little too often but this really is one of my go-to dishes. the first time i made this, darren ate it for dinner the following three days (by choice). originally they were inspired by the sweet and fluffy quesadillas that gracias madre put in front of me a few months back. what came with it was absolute terror in my gut.

the salsa is where it’s at.



have you ever tried the raw tortillas they sell at costco? whoa.

sweet potato quesadillas with green salsa

serves 3-4

green salsa

1/2 green tomato

1 bunch swiss chard

1 jalapeno

2 cloves garlic

¼ cup pepitas (pumpkin seeds)

½ cup olive oil

juice from ½ a lime

salt and pepper to taste

1. put all ingredients into a food processor and voila!

sweet potato quesadillas

2 sweet potatoes – peeled and cut into ½ inch cubes

2 teaspoons cayenne

1 teaspoon cumin

2 teaspoons brown sugar

3 tablespoons olive oil

1 yellow onion – roughly chopped

1 can (1 ½ cups) black beans

salt and pepper to taste

1 avocado – thinly sliced

package of your favorite tortillas

2-3 cups shredded cheddar or Jack cheese

a few tablespoons greek yogurt or sour cream

1. in a large bowl, toss potatoes with 1 ½ teaspoons cayenne, ½ teaspoon cumin, 1 teaspoon brown sugar, and 1 tablespoons olive oil.

2. pre heat the oven to 400°F.  lay potatoes out on a large baking sheet in one even layer and cook for 30-40 minutes.

3. meanwhile, heat 2 tablespoons olive oil in a large skillet and add: onion, 1 teaspoon brown sugar, ½ teaspoon cayenne, and ½ teaspoon cumin.

4. sauté onion until translucent, about 10 minutes on medium-heat.

5. once the potatoes are done toss them and the beans in with the onions, over a low heat, until combined. Add salt and pepper to taste.

6. make your quesadillas. tortilla, cheese, potato/bean mixture, avocado, cheese, tortilla. top with green salsa and greek yogurt.
