happy 1st. a friend of mine, ms. foodogenic, introduced me to this salad a month ago. if i could only have one sauce for the rest of my life (excluding sour cream) i wouldn’t be able to choose between this dressing or the pesto-salsa from earlier this week. i shall put them on everything – probably not together though.

the slaw’s dressing is an even mixture of fresh cilantro, peanut butter, a pop of vinegar, and a twinge of spice. get it got it good.

peanut-sesame salad adapted from the real food daily

4 cups shredded green cabbage

3 cups shredded red cabbage

2 carrots, peeled and shaved

2-3 radishes, peeled and sliced

10 whole green onions, julienned

2/3 cup peanut butter

1/3 cup rice vinegar

1/4 maple syrup or agave

3 tablespoons water

2 tablespoons miso

1 tablespoon peeled, minced ginger

2 cloves garlic

1 1/2 teaspoons sesame oil

1/4 teaspoon crushed red pepper flakes

1 cup cilantro leaves

1. in a very large bowl combine cabbages, carrots, radish, and green onion – set aside.

2. in a blender or food processor blend peanut butter, vinegar, maple syrup, water, miso, ginger, garlic, sesame oil, and crushed red pepper until smooth and creamy. add the cilantro and mix until just chopped.

3. dress your salad, eat, refill.

ps. someone special once told me that if “rabbits, rabbits, rabbits” is the first thing you say on the first, you’re in for some luck.
