taco!

have you seen the show ‘the league’? it’s pretty great and awesome. one of the guys name is taco. who doesn’t love tacos? they’re kind of like pizzas – you can transform them anyway you like as long as they are wrapped in a tortilla-like shell. maybe one day i’ll make a smore taco…

my mom made these incredible tacos the other day. she’s this really great vegan chef who throws tidbits at you along the way. for example, the sprouts here turn this meal into a digestive powerhouse. they magnify the potential value found in seeds and grains and help you to digest them. they also consume starch and carbs, cutting your sugar intake.

the tacos: charred corn tortillas, sweet avocado spread, sautéed shitake mushrooms and onions, asian lentils, fresh shredded carrots, sprouts, and a homemade green salsa. zippadeedoodah.

making your own taco bar (without a recipe) is easy too. i had a group of friends over and asked them each to bring an ingredient. the protein can be beans or meat and adding some fajita flavoring is one of the easiest things you can do to make it taste like it came out of a restaurante.

my, not as good-looking or healthy, taco bar if you’re feeling creatively impaired and/or lazy like me. cheese, greek yogurt, chopped onion, jalapeno, tomato, salsa, lettuce, avocado, ground turkey, tortillas.
