tahini-watercress salad wrap

i’ve been totally obsessed with anne gentry recently. this recipe is from her restaurant , rfd. it is their house salad with tahini-watercress dressing. i was uber hungry and turned it into a wrap.

adapted from the real food daily

3/4 cups watercress leaves

1/3 cup tahini

1/4 freshly squeezed lemon juice – about 2 lemons

2 green onions, coarsley chopped

1 tablespoon miso

1 tablespoon water

1 garlic clove

8 cups baby mixed greens

1 cup thinly sliced red cabbage

1 cup thinly sliced green cabbage

1 small cucumber, cut into 1/2-inch cubes

2 carrots, peeled and shredded

1 beet, peeled and shredded

whole wheat tortillas

1. blend the first seven ingredients together in a food processor.

2. toss with the remaining ingredients.

3. fold into tortilla to make a wrap.
