sweet potato mash with soyrizo hash

sorry about this picture, i took it when i was sick (last sick reference).

this recipe is a cinch. if you get large enough sweet potatoes you only need to peel 1-2. it is homey and delicious.

sweet potatoes have a great amount of fiber, vitamin a (helping your vision and immune function), vitamin c, vitamin b-6 (increasing metabolism), and potassium (affecting nerve transmission and muscle contraction). enjoy with pride friends.

sweet potato mash

2 large sweet potatoes

1 tablespoon brown sugar

1 tablespoon maple syrup

1 tablespoon coconut oil or other oil

1 tablespoon fresh (or frozen) zested ginger

1/2 teaspoon salt

soyrizo

white onion, chopped

green onion

garlic

olive oil

1. peel sweet potatoes and cut into 1″ cubes, boil for 15 minutes or until tender.

2. toss cooked sweet potato into a mixing bowl and mash (i just used a kitchen-aid and mixed) with: brown sugar, maple syrup, coconut oil, ginger, and salt.

3. saute onion and garlic in olive oil until the onion is translucent. add in the soyrizo and fry until it is the consistency you want.

4. toss soyrizo mixture on to the mash, top with green onions, eat.

*sidebar: darren LOVED the soyrizo. i was not totally thrilled with it and instead threw some cayenne into the mash and ate it without the hash.

  2. ive yet to try soyrizo…your review makes me think ill feel the same…so maybe now ill get some for kyle and sample it then. i suspect he will definitely enjoy it.
