i’m eating vegan starting today for a while. i’ve gone a little haywire. really, i’ve let go. darren has been home ordering pizza, picking up chicken wings, making roast beef sandwiches, defrosting orange chicken.. the list goes on and on. my body needs a break. my scale woke me up. brrdat!
these bbq beans were a perfect “trick” course to wean me into a plant based diet. they are incredibly good. ridiculously spicy. so frickin easy. vegan but taste like they’ve got to have meat in them somewhere.
get that protein gurl.
bbq baked beans
2 tablespoons olive oil
1 shallot, chopped
1-2 jalapeños, chopped
2 cloves of garlic, chopped
1 can of pinto beans
1/2 cup of your favorite bbq sauce (kinder’s all the way)
1/2 cup vegetable broth
1 tablespoon agave (honey works too)
1 tablespoon pureed chipotle pepper in adobo sauce (i buy mine in a small can and separate into sandwich bags to freeze. shave off 1 tablespoon with a sharp knife – super easy.)
1-2 teaspoons sriracha (or any hot sauce)
salt and pepper to taste
1. in a small pot, saute jalapenos, garlic, and onion in the olive oil for 2-3 minutes.
2. add the rest of the ingredients, bring the mixture to a boil, and let simmer for 20-25 minutes or until thick and sticky.
