i felt it only appropriate to post this the day after yesterday’s. since yesterday’s recipe is this recipe’s mother, they go together like chocolate and peanut butter. this is a sweeter, tangier version of yesterday’s.

the day after our german meal i went to the farmers market and bought a bag of micro-greens. what the hell, right? try something random and new.

i also had a brand new nature box waiting for me to dig in to. do you know what nature box is? 1/month they deliver random healthy, usually vegan treats right to your door. things like: coconut granola, dried apple and pineapple slices, mesquite honey almonds, sesame sticks, chili-lime pistachios, rice puff bites, trail mixes up the waz, crackers..etc. it is fabulous, especially for anyone who likes snacks. i seriously recommend this as a gift, to try, for fun, because you can.

point is: my last box included ‘honeycomb sunflower seeds’ which are waaayy too good to be true. i used these all over my salad. i’m sure you could recreate this effect by buying bulk sunflower seeds and toasting them with a few tablespoons of honey.

my creamy-sweet strawberry salad inspired by yesterday’s post

for 1 serving..

2 tablespoons of yesterday’s honey-mustard vinaigrette

2 tablespoons greek yogurt

1 tablespoon honey

3 cups micro-greens

1/2 cup quartered strawberries

1/4 cup chopped cucumber

1/8 cup avocado

3 tablespoons honeycomb or honey roasted sunflower seeds

1. whisk together vinaigrette, yogurt, and honey to make the dressing.

2. toss all ingredients together.
